That frittata looks awesome! Just last night, my husband found an errant half-used bag of swiss cheese hiding in the back of the fridge, and your post inspired me to use it up in a frittata, with the cheese as the dairy product. I cleaned out my frozen veggie bin, using onions, bell peppers, chopped spinach, and some ancient frozen cauliflower. I only used five eggs, because there seemed to be plenty of veggies in the pan already. Now we have a yummy, healthy, but inexpensive lunch. 👩‍🍳 Thank you for the inspiration!

Frittatas have saved me so many times! Also a fan of a masala omelette when cooking for one (meera sodha has a recipe for one I return to again and again)
